Vegan Chocolate Chip Cookies, just like your grandma's!

One of my friends recently applied and got offered a position at UNO as a graduate assistant. In hearing about him applying, I told him, that if he got it, I'd make him cookies -- I was going to make them for him regardless, but I think it may have pushed him to work a little hard (because who doesn't like free cookies??).
In offering to make them, he had one request -- they had to be good. He is one of the many friends that are hesitant to try vegan things, especially when it comes to sweets, as he loves them. In that being said, I set out to find a recipe that he would love.
I wanted the recipe to be one where he wouldn't be able to tell if they were vegan or not.
The recipe I found is one that is unique in that it is sweet, but not incredibly sweet and that it's also vegan. I, however did not use the flax seeds that were asked, as I didn't have them. I wish I would have though, as flax seeds have a ton of fiber in them, as well as healthy fats.

In mixing the batter, I was hesitant in it being too dry, but the cookies turned out great! I made the cookies pretty large, as I love big cookies. I also sprayed the pan, as I wasn't sure if they were going to stick to it or not -- I don't usually follow recipes closely, unless it's baking and measurement, as too much of anything within a baking recipe can ruin the product, and it's harder to fix.

The end result was a bigger cookie that wasn't super chewy, but still dip in milk and gobble up delicious! They're even non-vegan approved :)
